thai chicken san choy bau

Lunch time…a couple of lettuce wraps. Super quick, easy and will taste just as good tomorrow.


Fry 2 chopped red chillies and 500g (1lb) chicken mince in 1 tablespoon peanut oil in a hot frying pan until golden. Add 2 tablespoons fish sauce, 2 tablespoons lemon juice and 1 tablespoon soy and cook for 1 minute. Remove from heat and stir through 1/2 cup chopped mixed coriander (cilantro) and mint leaves. Spoon into baby cos lettuce leaves and serve.
