harissa and yoghurt baked chicken

So I cheated, all I had were 2 chicken breasts. This is an incredible dish and something I would highly recommend with a BBQ.

recipe

1.6kg (3 1/2lb) chicken, quartered
1 tablespoon corn starch
1 cup thick plain yoghurt
1 tablespoon harissa or chilli paste
1/3 cup shredded mint
2 tablespoons ground cumin
cracked black pepper and sea salt

Preheat the oven to 200C (400F). Make deep slits all over the chicken pieces. Blend together the corn starch, yoghurt, harissa, mint, cumin. pepper and salt. Spread the yoghurt mixture all over both sides of the chicken. Place the chicken on a rack in a baking dish. Bake for 25-35 minutes or until the chicken is crisp and golden. Serve warm or cold with a green salad and a squeeze of lemon. Serves 4. (in my case 2)

  1. I have the DH magazine with lots of recipes calling for harissa – is this difficult to find in the grocery store and is it spicy??
