Don’t get me wrong, there are a million reasons to travel to Reims BUT there is something to be said when you can dip a sugary biscuit into a glass of legitimate, tiny bubble, champagne and put your pinky up. One of my all time favorite trips was a bestie break to check out all the incredible powerhouse women that have made champagne what it is today. This article explains enough about that and Pommery was our flag we waved. What was interesting were the pink delicate biscuits we received with a glass of bubbles. These pink little beauties are called Biscuit Rose De Reims from a company called Fossier. A mistake. We thank you. This bakery used to make bread and in between batches wanted to make the most of cooking time. Enter the Biscuit Rose de Riems a twice cooked dough. The biscuit, originally white, then to vanilla traced brown & eventually to our lovely pink, to disguise a flavour “mistake”. This sugary delicious treat leaves me quoting Lily Bollinger – “I only drink Champagne when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company, I consider it obligatory. I trifle with it if I am not hungry and drink it when I am. Otherwise, I never touch it—unless I’m thirsty.” Pinkies up, this one’s for you Elise.
