tuna pate with marinated olives

This is the easiest appy to make and it’s loved by all.


1 x 425g can tuna, drained
1 tablespoon whiskey
100g butter, chopped
1 tablespoon finely grated lemon rind
1/2 teaspoon chilli powder
4 anchovies
sea salt and cracked black pepper

marinated olives
200g mixed olives
1/2 cup extra-virgin olive oil
1 1/2 tablespoons lemon zest
4 cloves garlic, sliced

To make the marinated olives, place the olives, oil, lemon zest and garlic in a bowl and mix to combine. Cover and refrigerate overnight to allow the flavours to infuse.
Place the tuna, whiskey, butter, lemon, chilli, anchovies, salt and pepper in the bowl of a food processor and process for 2-3 minutes or until smooth. Spoon into a dish and refrigerate for 1 hour or until firm. Serve the pate with a crusty bread and olives. Serves 4
