garlic roast asparagus

I pre-roasted the garlic and it added less garlic bite but wonderful flavour.


2-3 bunches asparagus, trimmed
olive oil
4 cloves garlic, sliced
shredded rind of 1 lemon
lemon juice, to serve
shaved parmesan cheese, to serve

Preheat the oven to 180C (355F). Place the asparagus in a baking dish. Sprinkle over a generous amount of olive oil and toss with garlic and lemon rind. Cover and back for 25-35 minutes or until the asparagus is tender. Serve with a squeeze of lemon and the shaved parmesan. Serves 8.
